How to use: A tablespoon of the stock paste is equal to about one stock cube, so 1 tablespoon in a stew or a soup or a gravy is enough to flavour it. Use it in stir-fries and curries, too.

Many kamokamo are around at the moment and while an enhancement to any meal, my favourite way of using them this year is baked in their shell and then filled with your choice of filling

Method

  1. Wash, halve and scoop out your kamokamo, mix together your favourite spice mix adding a teaspoon of oil and brush onto the inside of the vegetable (or just salt and pepper with the oil).

2. Bake in a 180 degree oven for 40 minutes depending of the size of the kamokamo until the inside is soft. Place in a bowl and fill with your favourite soup, pasta or stew.

3. Then, you don’t just eat your usual delicious dinner, but also have that beautiful buttery kamokamo flesh as well.

It is simple to individualise each meal if you have fussy eaters like my lot.
